How do I sit with physical restlessness when I can't stay still?

Your body is not interrupting the sitting. It is the sitting. Restlessness is energy with nowhere to go, and you keep trying to cage it. Stop fighting. Let the itch itch, let the leg want to move, and watch the wanting itself: where it burns, how it rises, how it changes. If you must move, move slowly, with full attention, and that is still zazen. Next time you sit, before you shift, count three breaths, then decide.
This was one stranger’s question. In the app, you sit, say what is actually going on, and the teacher answers you, in a voice, privately. The first dokusan is free.
