Is it normal to forget to breathe naturally when I watch my breath?

You are not watching your breath. You are managing it. Almost everyone does this at first. Attention is used to having a job, so it grabs the controls. Don't fight that, and don't try to breathe naturally, which is just more managing. Notice the grip itself. The body breathed you all night and all through your commute without your help. It settles on its own. Next sitting, when you catch yourself steering, feel the breath at the nostrils and let it be clumsy.
